The Wine office was run by three nobles, who were occasionally joined by three other noble senators. The office charged a tax on the sale of wine (gabella de vinni), prevented the smuggling of wine and controlled the planting of vines. Planting control was managed by temporarily appointed commissions. Namely, in order to stimulate the cultivation of food grains, the authorities of the Republic limited the planting of vines and excessively planted vines were being destroyed. Measures for wine and wine prices were also controlled, and this work was performed by justizieri (supervisors of measures and weights).

The fonds has been linked to the archive since its inception. In times of the Dubrovnik Republic, the books of the fonds were stored in the Rector's Palace. The books remained in the Rector’s Palace after the fall of the Republic (1808). In 1891, the archives were consolidated and became available to researchers. The archive in the Rector's Palace has been functioning as an independent institution since 1920 and it was dislocated to the Sponza Palace in 1952, where it is still located today.

The fonds does not contain any data on Jews.
The fonds consists of registers covering the period from the 16th to the beginning of the 19th century, which were kept by the Wine Office and a commission in charge of controlling the planting of vines. The registers contain entries on cutting of the over-planted grape vines, on taxes on wine (gabella de vinni), data on wine smuggling and similar information (related to wine harvesting).

The fonds is fully accessible to researchers in accordance with the Ordinance on the work in the reading room of the State Archives in Dubrovnik and the Law on Archival Materials and Archives NN 61/18 (Pravilnik o radu u čitaonici Državnog arhiva u Dubrovniku and Zakon o arhivskom gradivu i arhivima NN 61/18).
